You may remember a few months ago when I gave away Elana Amsterdam’s first cookbook, The Gluten Free Almond Flour Cookbook. Elana is a grain-free recipe creating genius. She now has two cookbooks, and a very successful blog Elana’s Pantry.
Ever since I went grain-free, Elana has been a huge inspiration. Her creations are always mouthwatering and so creative. And most of them have super short ingredient lists, which is always nice and less daunting. Her blog is full of decadent cookies, cakes, and cupcakes. CUPCAKES! Who knew that these little cakes could still be as delicious and pretty as their grain predescors??!
Different from her first cookbook, Elana’s Gluten Free Cupcakes cookbook incorporates the use of coconut flour, which I just love using in my baking. She has also started using coconut oil, alternative sweeteners, and has mostly eliminated the use of arrowroot powder since her first book, making this one much more SCD and Paleo friendly.
To get you started in your baking, I’m also throwing in a bag of Let’s Do Organic Coconut Flour. It’s organic, gluten free, low fat, and high in fiber. This is my favorite one to bake with so far. You’ll love it!
